7 Meals from a $50 Grocery Haul

I recently did a grocery run and managed to get everything I needed for a week’s worth of meals for under $50. I like to think I’m getting better at this whole meal prep thing, and I’m excited to share what I made with my haul. From grilling out to cooking up a storm in the kitchen, I was able to make some delicious meals without breaking the bank.

My Grocery Haul

I started by making a list of the staples I needed for the week: rice, beans, chicken breast, ground beef, and some fresh veggies. I was able to find some great deals on these items, including a 5-pound bag of rice for $10 and a pack of chicken breast for $8. I also picked up some frozen veggies and a few spices to round out my haul. Here’s a rough breakdown of what I got:

  • 5-pound bag of rice: $10
  • Pack of chicken breast: $8
  • Ground beef: $6
  • Frozen veggies: $2
  • Spices: $4
  • Fresh veggies: $10
  • Canned goods: $5
  • Granola and yogurt for breakfast: $5

Total cost: $50

Cooking Up a Storm

With my groceries in hand, I started cooking up a storm in the kitchen. I spent about 2 hours on Sunday afternoon prepping my meals for the week. I made a big batch of chicken and rice, which I portioned out into individual containers for easy lunches and dinners. I also made a pot of chili using the ground beef and some of the frozen veggies. And, I grilled up some chicken breast and veggies for a quick and easy dinner. Here are some of the meals I made:

  • Chicken and rice bowls
  • Beef and veggie chili
  • Grilled chicken and veggie skewers
  • Stir-fry with frozen veggies and ground beef
  • Chicken and veggie soup
  • Breakfast granola and yogurt parfaits
  • Chicken quesadillas

I was able to get 7 meals out of my grocery haul, which works out to about $7 per meal. Not bad, if you ask me.

Tips and Takeaways

I’ve found that meal prep is all about being smart with your groceries and your time. By buying in bulk and planning out my meals, I’m able to save money and reduce food waste. I also like to keep things simple and focus on a few core ingredients that I can use in multiple meals. And, I’ve learned that it’s okay to get a little creative and experiment with new recipes and ingredients. One thing I’m looking to try out this summer is grilling more often, maybe even picking up a new grill or some kitchen gifts for my mom for Mother’s Day.
