7 Freezer-Friendly Meals I Actually Eat
I’ve been meal prepping for a while now, and I’ve found that having a stash of freezer-friendly meals is a total lifesaver. It’s not just about having food on hand, it’s about having food that I actually look forward to eating. As we head into Spring, I’m excited to share some of my favorite recipes that make meal prep a breeze.
Breakfast Options
For me, breakfast is the hardest meal to prep, mostly because I get bored with the same old oatmeal or scrambled eggs every day. That’s why I love making big batches of breakfast burritos and freezing them individually. It takes about 30 minutes to make a dozen, and they cost around $1.50 each. I just wrap them in plastic wrap or aluminum foil and toss them in the freezer. To reheat, I just microwave for 2-3 minutes and add some salsa or hot sauce. I also like to make muffin tin frittatas, which are easy to customize with different veggies and cheeses.
- 1 dozen eggs, $1.50
- 1 cup frozen veggies, $1.00
- 1 cup shredded cheese, $2.50
- 12 tortillas, $2.00
Lunch and Dinner Options
When it comes to lunch and dinner, I like to make big batches of soup or chili that can be frozen in individual portions. My favorite is a lentil soup that’s super easy to make and can be customized with different spices and veggies. It takes about an hour to make a big batch, and it costs around $5.00 for 6 servings. I also like to make casseroles, like lasagna or chicken enchiladas, which can be frozen and reheated as needed.
One thing I’ve learned is to label and date everything before freezing, so I don’t end up with a mystery meal that’s been sitting in the freezer for months. I also try to freeze things in portions that make sense for me, so I’m not stuck with a huge block of frozen food that’s hard to reheat.
Tips and Tricks
One of the most annoying things about meal prep is the cleanup, so I try to minimize the number of dishes I use. I also like to cook in bulk, so I can make a big batch of rice or quinoa that can be used in multiple meals. And, of course, I love using my slow cooker to make meals that are ready when I get home from work.
If you’re looking to upgrade your kitchen space, I’ve been eyeing some prints from Printsofprint on Etsy — they do abstract landscapes and some fantasy-style art that’s actually really different. It’s not directly related to meal prep, but it’s definitely inspired me to make my kitchen a more welcoming space.
What do you use for meal prep containers? I’m always on the lookout for new ideas.
